Looking for a spooky showstopper that’s actually easy to make? Give this no-bake Halloween Graveyard Themed Cheesecake a go! It has three hauntingly delicious layers – light and fluffy vanilla cheesecake, topped with blood-red tangy raspberry coulis, finished with crunchy Oreo biscuit “soil”. It’s the perfect last-minute Halloween dessert for sharing and digging into with a spoon!

- Double cream: Whipped into the cheesecake mixture for that light, fluffy and airy texture.
- Oreo biscuits: Crushed up for the graveyard “soil” on top. It’s crunchy, chocolatey and perfectly spooky!
- Graveyard decorations: This is where you can get creative! Try tombstone biscuits, gummy worms, or spooky chocolates. I used Halloween-themed chocolate skulls from The Chocolate Gift Company to decorate the cheesecake. Don’t you think they look spooktacular on top of the Oreo soil?
How To Make Halloween Graveyard Themed Cheesecake
Step 1: Make the vanilla cheesecake mixture
This part couldn’t be easier. Add the cream cheese, icing sugar, and vanilla extract to a large mixing bowl, then grab an electric handheld mixer (or use your stand mixer with a whisk attachment). Whisk everything together until smooth, then pour in the double cream and keep mixing until the texture turns thick, fluffy, and airy. You’re looking for a mixture that holds its shape when spooned. That way, your Halloween graveyard themed cheesecake will set beautifully with minimal chill time.
Once it’s ready, spread the cheesecake mixture evenly into your serving dish (mine was 15x23cm). Or divide it between small ramekins if you’d rather make individual portions. Both look great on a Halloween dessert table!
Step 2: Prepare the raspberry coulis
This raspberry coulis lurks beneath the biscuit soil and really brings the Halloween “wow” both in colour and flavour when you dig into the cheesecake! The coulis is made by cooking raspberries with a bit of sugar, lemon juice, and cornflour until they soften and thicken into a vibrant, glossy sauce. It adds a tangy, fruity punch that cuts through the rich, creamy vanilla cheesecake, giving every bite a lovely balance of sweet and tart. For a silky smooth finish, you can strain it to remove the seeds. Pour the coulis over the vanilla cheesecake and spread it out evenly.



Step 3: Scatter the biscuit ‘soil’ on top
Now for the spooky “graveyard” crunch! I used Oreo biscuits, but you could totally switch things up with Bourbons, Chocolate Digestives, or KitKats (to name a few!). Just bash the biscuits into fine crumbs using a rolling pin or food processor until they resemble crumbly soil. Scatter this over the cheesecake to create that graveyard look. The biscuit crumbs add a crunchy texture that contrasts perfectly with the smooth cheesecake and tangy raspberry coulis.

For the raspberry coulis layer:
- 200 grams Raspberries fresh or frozen
- 50 grams Caster sugar
- 1 Lemon juice only
- 2 teaspoons Cornflour
For the vanilla cheesecake layer:
- 600 grams Full-fat Philadelphia Original Cream Cheese
- 150 grams Icing sugar
- 2 teaspoons Vanilla extract
- 300 millilitres Double cream
For the graveyard biscuit soil:
- 90 grams Oreo biscuits
Instructions
Start by making the raspberry coulis
- In a saucepan, combine the raspberries, caster sugar, lemon juice and cornflour.200 grams Raspberries, 50 grams Caster sugar, 1 Lemon, 2 teaspoons Cornflour

- Cook on medium heat for 5-10 minutes until the raspberries have softened (squish them with a fork) and the coulis has thickened up. To remove the seeds, strain the raspberry coulis through a sieve into a bowl and place in the fridge to cool.

Now make the vanilla cheesecake
- In a large bowl, add the cream cheese, icing sugar and vanilla extract. Use an electric mixer to whisk the ingredients together until smooth and combined.600 grams Full-fat Philadelphia Original Cream Cheese, 150 grams Icing sugar, 2 teaspoons Vanilla extract
- Pour in the double cream and continue whisking on medium-high speed for 4-5 minutes until the cheesecake mixture is thick and holds its shape.300 millilitres Double cream

Layer the cheesecake
- Spoon the vanilla cheesecake into the base of a serving dish and spread it evenly into a layer.

- Pour the raspberry coulis on top and use the back of a spoon to spread it out evenly. Place in the fridge.

Make the graveyard biscuit soil
- Bash the biscuits into fine crumbs using a rolling pin.90 grams Oreo biscuits
- Take the cheesecake out of the fridge and cover the surface with the biscuit crumbs.

- Decorate with your graveyard decorations and place back in the fridge until you're ready to serve the cheesecake. The longer the cheesecake sets for the fluffier it will be.

- Serve with spoons and bowls for sharing, then dig in and enjoy!
