What inspired this recipe collection?

Cookies have become my favourite sweet treat to bake for so many reasons… they’re simple to make, loved by all and can easily be adapted to switch up the flavours. I also love love love desserts and classic puddings and so one day I had the idea to combine to two. Enter the dessert cookie!

Your equipment list for baking cookies

Good news… you don’t need any fancy equipment or tools to bake these dessert cookie recipes! However, it does help if you have this selection of baking tools to hand which can be used every time you make cookies:

  1. Digital kitchen scales: for accurately and precisely measuring ingredients. We all know baking is a science!
  2. Large baking sheet: cookies naturally spread in the oven so you need to leave space between them on the baking sheet. That’s why it’s best to choose a large baking sheet so you can bake lots of cookies in one batch.
  3. Measuring spoons: most of these dessert cookie recipes contain flavoured extracts and salt which are measured in teaspoons, this is where a set of measuring spoons will come in very handy.
  4. Cookie or ice cream scoop: can be used to scoop up evenly sized portions of cookie dough and shape them into mounds with little mess.
  5. Round cookie cutters: my favourite cookie hack! Use a large round cutter to scoot misshapen cookies into a perfectly round shape. Just remember to do it as soon as the cookies are out of the oven and still warm.
