Ingredients For Brown Butter Cookies
To make these deliciously moreish brown butter cookies you will need:
- Unsalted butter – using unsalted butter when making browned butter allows you to have better control over the overall salt content in your recipe.
- Light brown sugar – using light brown sugar helps to introduce a caramel flavour which works really well with the browned butter and it’s slightly nutty flavour.
- White caster sugar – it’s a classic in a lot of bakes, adding just the right amount of sweetness.
- Egg yolk – the egg yolk helps to bind the cookie dough together and adds an extra dash of richness. There’s no need for egg whites in this recipe – we want gooey cookies!
- Vanilla extract – for best results use vanilla extract rather than vanilla essence.
- Self raising flour – the raising agents are already in self raising flour, helping the cookies have a light yet chewy texture.
- Salt – a pinch of salt helps to enhance the flavours in the cookies.

How to Make Brown Butter
Brown butter is so easy to make, but can seem overwhelming at first. Put simply, it’s the process of melting the butter and letting the milk solids caramelise slightly – it’s these brown bits that give brown butter it’s name. When brown butter is added to a bake it gives a delicious nutty caramel flavour, perfect when combined with light brown sugar and chocolate, to elevate the overall taste of the cookie! It’s an extra step but definitely one worth taking to bake these scrumptious cookies.
How to Make Chewy Cookies
What’s the secret to chewy cookies? Chill the dough before baking. This allows the butter to firm back up and stops the cookies from spreading too much in the oven. Not chilling these cookies means they will lose their shape in the oven (and might merge together into one huge cookie) resulting in a thin and crispy cookie, rather than then chewy gooey cookies we’re making in this recipe.
Another secret to chewy cookies is to slightly underbake them – they will continue to bake as they cool down, resulting in a delicious soft, gooey cookie texture (which is what we want!). It can be tempting to move them too soon but allowing them to cool on the tray will help them to finish cooking and firm up around the edges – be patient, it will be worth the wait!

Chocolate Christmas Crackers
For these super easy brown butter cookies I used the chocolate batons in the Christmas Crackers gift set from The Chocolate Gift Company. The batons come in a beautiful gift box, perfect for gifting, and are hand-wrapped in different patterned papers. The flavours inside are:
- Milk chocolate and demerara sugar
- Dark chocolate and freeze dried raspberry
- White chocolate and cookie crumb
You can chop these chocolate batons into small chunks to add the into the cookie mix. They melt into the cookie during baking and create delicious pools of molten chocolate 🤤🤤

Christmas Cracker Cookies
Ingredients
- 160 grams unsalted butter
- 150 grams light brown sugar
- 100 grams white caster sugar
- 1 egg yolk at room temperature
- 2 teaspoons vanilla extract
- 280 grams self raising flour
- 0.5 teaspoon salt

Instructions
To make the browned butter:
- Measure the unsalted butter into a saucepan and place over a medium-low heat. Stir until the butter has melted. Continue to heat whilst swirling the pan occasionally until the melted butter is foamy on top and a golden amber colour (usually around 4-5 minutes). The browned butter will have small brown flecks in it – these are caramelised butter solids which taste amazing in the cookies, so don't remove them!
- Pour the browned butter into a mixing bowl and leave to cool for 10 minutes.
To make the cookies:
- Add the brown and white sugar into the bowl with the browned butter. Mix in the egg, egg yolk and vanilla extract. Divide the cookie dough evenly between 3 bowls.
- Chop the Christmas Cracker chocolate batons into small chunks.
- Fold the milk chocolate chunks into one bowl, the white chocolate chunks into the second bowl and the dark chocolate chunks into the third bowl.
- Scoop up heaped tablespoons of cookie dough and toll into balls. Place them on a lined baking tray as you go. You should be able to make 15 in total.
- Cover with clingfilm and place into the fridge to chill for at least 1 hour (or up to 2 days if preparing ahead).
- Preheat the oven to 180ºC (fan). Line 2 large baking trays with baking paper.
- Place 5-6 cookies on each baking tray, leaving at least 8cm space between each so they have room to spread when baking.
- Bake for 10-12 minutes until golden and firm around the edges. The middle should look pale and under-baked – this is a good thing!
- Leave the cookies to cool on the baking tray for at least 20 minutes. The cookies will continue to cook and firm up during this time. Now pour yourself a glass of milk and enjoy these delicious cookies!

These look amazing! If I wanted to turn these into triple chocolate cookies, should I decrease the flour?
Yes exactly that! If you want to make them triple-chocolate, reduce the self-raising flour to 240g and add 40g cocoa powder 😊
