Your Ingredients List
- Milk chocolate – This is the base of the rocky road bark, so make sure to use a chocolate you enjoy eating on its own. Milk chocolate keeps things creamy, sweet and classic, and sets with a lovely snap once chilled.
- Digestive biscuits – Roughly chopped digestives add that all-important crunch and stop the bark from being overly sweet. They also give the rocky road its signature texture and make each bite more interesting.
- Epic Snax Mini Marshmallows – Soft, squidgy and perfectly sized for mixing through melted chocolate and scattering on top. The marshmallows bring that chewy contrast that makes rocky road such a favourite.

How To Make Rocky Road Chocolate Bark
Step 1: Melt the chocolate
First things first, chop your milk chocolate into small pieces; it just makes it easier and quicker to melt. Pop it in a big glass bowl and choose your melting technique: a gentle heat over a saucepan of simmering water or a few short bursts in the microwave. Keep stirring as you go, chocolate can be a bit diva and burn if you leave it alone. When it’s almost all melted, just let the heat of the bowl do the work for the last little chunks of chocolate instead of turning up the heat. Trust me, it saves you from that horrible seized, chocolate moment.
Step 2: Fold in the marshmallows and biscuits
Now for the fun bit, throwing everything together! Stir most of your roughly chopped digestive biscuits and mini marshmallows into the melted chocolate, making sure everything gets coated. Leave a handful of each to one side, we’ll use these for decorating the top later, and it just makes your bark look extra pretty. Give it a good fold until everything is evenly mixed. Step 3: Press out the mixture and leave to set
Line a baking tray with baking paper, spoon on your chocolate mix, and press it out to about 1cm thick, rustic is the vibe, so don’t stress about perfection. Spoon over any leftover chocolate to fill the gaps, then scatter your reserved marshmallows and biscuits on top, pressing them in so they stick.
When it comes to setting, you’ve got two options:
- Quick option: Pop it in the fridge for about an hour. Pros? Fast option, perfect if you’re in a rush. Cons? It can lose a little of that glossy finish.
- Slow option: If you’ve got a bit more time, cover and leave the rocky road bark at room temperature overnight. Pros? Keeps its shine and is less likely to get melty in your hands. Cons? You’ll have to wait a bit longer before digging in.

Step 4: Break up the Rocky Road Bark
Now comes the fun part – breaking up your rocky road bark! There’s no right or wrong way here. Simply peel the slab off the greaseproof paper and use your hands to snap it into pieces, pulling the marshmallows apart. Now dig in and enjoy that crunchy, chewy, chocolatey perfection!
