You Only Need Five Ingredients

This recipe keeps things simple, but every ingredient works hard to deliver that decadent flavour and texture. It’s also a flourless cake, making it naturally gluten-free—so no extra tweaks are needed for your gluten-free guests!

  • 70% dark chocolate: The star of the show! Choose good-quality chocolate for the best flavour and that irresistible fudgy texture. 70% dark chocolate makes sure the cake isn’t too sickly sweet or too bitter.
  • Salted butter: Adds richness and ensures a luscious, melt-in-the-mouth finish. The salt balances the sweetness beautifully.
  • Caster sugar: Sweetens and stabilises the mixture while giving the edges a slight crispness.
  • Eggs: The eggs create the structure, keeping the cake light yet dense in all the right ways.
  • Unsweetened cocoa powder: Intensifies the chocolate flavour and adds to the truffle-like texture. Choose good-quality cocoa powder, preferably 100%.

Baking This Cake in the Oven

No air fryer? No problem! You can bake this chocolate cake in a traditional oven and here’s how:

  1. Preheat your oven to 180°C (fan).
  2. Grease and line a 20cm round baking tin.
  3. Pour the cake mixture into the tin and bake for 30-40 minutes. The baking time may vary, so just look for a cake set around the outer edge but jiggly in the middle.
  4. Allow to cool in the fridge for 20 minutes before turning out.

The oven method takes a little longer, but the results are just as delicious.

Ingredients

  • 200 grams 70% dark chocolate
  • 120 grams Salted butter
  • 150 grams Caster sugar
  • 3 large Eggs or 4 medium eggs. Room temperature.
  • 50 grams Unsweetened cocoa powder

Instructions

  • Measure the chocolate and butter into a glass bowl. Microwave in 30-second bursts, stirring in between, until melted and smooth. Set aside.
    200 grams 70% dark chocolate, 120 grams Salted butter
  • Whisk the sugar and eggs in a separate bowl with an electric or hand whisk until thick, voluminous, and pale in colour (roughly 4-5 minutes).
    150 grams Caster sugar, 3 large Eggs
  • Fold in the cocoa powder, then fold in the cooled melted chocolate until the cake mixture is fully combined.
    50 grams Unsweetened cocoa powder
  • Place the liner in the base of your air fryer (remove the basket if it has one) and pour in the chocolate cake mixture.
  • Air fry at 180°C for 25-30 minutes (the cake should be set around the outside but jiggly in the middle).
  • Leave to cool for 10 minutes inside the air fryer, then carefully lift the silicone liner out using the handles and pop it in the fridge for 10 minutes to cool. 
  • Run a knife around the outside to peel the cake away from the liner, then invert it onto a serving plate (the cake should drop out). Decorate and enjoy!
